Chili Roasted Chicken
Use Carroll Shelby’s Chili spices as the base for a delicious spice rub for roasting meats. This roast chicken can go mild or spicy, and can be served as a roast chicken dinner or shredded to make tacos, burritos and dips.
Ingredients
- 1 Carroll Shelby’s Chicken Chili Seasoning
- 1 stick butter, melted
- 1 1/2 teaspoons kosher salt, or to taste
- 1 roasting chicken (3 1/2 to 5 pounds), washed and patted dry
Directions
- Preheat oven to 400℉.
- In a bowl, combine the contents of the spice and seasoning packets (except the masa; discard the masa packet or reserve for another use) with the melted butter and salt and mix well. (To Fix it Spicy, use all of the cayenne pepper packet. To Fix it Mild, use less cayenne pepper.)
- Rub the chicken inside and out with seasoning mixture; transfer to an aluminum foil lined baking sheet.
- Roast the chicken for 55 minutes to 1 hour or until the internal temperature reaches 165℉.
- Let stand for 5 to 10 minutes before serving.
